Breakfast Salad

Low carb, protein rich, water dense and delicious

A suitable salad for breakfast or any meal.

This is a great alternative to a typical morning meal.  It’s nice and light but fills the body with energy and won’t slow you down.  Since there are eggs involved I figured it’s not such a stretch to have for breakfast.  It’s a great meal to have after a morning work out to replenish your body.  The protein helps muscle recovery while the water dense veggies help you hydrate.  The healthy fat from the avocado is nourishing and comforting.  All around a very simple and delicious meal to whip up for breakfast or anytime.

  • Plateful of baby kale or any type of leafy greens (red leaf lettuce shown in photo)
  • A few slices of fresh tomato
  • Sliced hard-boiled egg
  • 1/2 avocado sliced
  • Juice of half a lemon
  • Salt & Pepper

Layer the greens, tomato, avocado and sliced egg in that order.  Then drizzle the lemon juice on top, and sprinkle with salt and pepper to taste.  Quick and healthy!
