Sugar Free, Vegan Peanut Butter Milk Shake

This fulfilling treat of a milk shake is vegan, sugar-free and tasty!  This is what I call summer comfort food.

I love making my own almond milk because it tastes completely more delicious than anything store-bought.  Plus most packaged milk alternatives are pasteurized, so you lose the beneficial nutrients and enzymes homemade raw almond milk provides.  However, in a pinch, an unsweetened store-bought kind works fine.  I like Califia Farms Coconut Almond, or Pacific unsweetened organic Almond Milk

1 pint of Almond or Coconut Milk
1 Tb chia seeds
2 Tb sugar-free peanut butter (or almond butter)
1/2 packet of Stevia (about 1/4 tsp)
1 tsp of cacao nibs
2 Tb cocoa or raw cacao powder*
1/4 cup coconut chips
5 or so ice cubes

  • Cover the chia seeds in some almond milk and let sit for about 1/2 an hour (longer is fine).

If you know you might want to drink this for say, dessert it’s great to soak them before dinner and then they’ll be ready for you to blend up later.  Or, if I have left over chia seed pudding in my fridge sometimes I just use that.

  • Blend all ingredients in a Vitamix or blender until thick and creamy. Pour in your favorite frosty mug and try not to chug it all in one gulp!

*Cold pressed raw cacao powder is high in antioxidants and magnesium.  If you are sensitive to caffeine go easy, or avoid.
